This recipe comes courtesy of our patient, Kelli and will change your definition of a chicken salad. It is super easy to make as well as very light and refreshing.
Ingredients ::
- Whole Wheat Tri-colored Rotini Pasta (1/2 box)
- Can of Chicken or 2 large chicken breasts
- 1 cup dried cherries
- 1/2 cup sliced almonds (unsalted)
- 1/2 cup Light Miracle Whip
- 1/2 cup Fat Free Poppy Seed Dressing
- Salt and Pepper to taste
Directions ::
- Cook the pasta to slightly past al dente and let cool.
- If using chicken breasts, season with salt and pepper and bake in oven until cooked through.
- Mix the Miracle Whip and Poppy Seed dressing in a small bowl.
- Add the pasta, chicken, cherries, almonds and dressing mixture in a large bowl and mix it all together.
- Finally, season with salt and pepper to taste.
- Serve over butter lettuce and drizzle a little more Poppy Seed dressing over the top.
